A real winter warmer, this seasonal soup made up of Savoys, leeks & potato from our fields and some good quality, local stock!
Heat the oil in a large saucepan or casserole dish.
Add the onion, carrot, garlic, salt and chilli flakes. Fry over a high heat for 5 minutes.
Turn the heat down to low and cook for another 10 minutes or until softened.
Add the cabbage, leeks and potato and pour in the stock. Bring to the boil and then turn the heat down to low. Simmer for 20 minutes or until the potatoes are softened and starting to break up.
For us, nothing says Spring like a delicious lamb roast accompanied by minted, seasonal veg and garlic butter new potatoes!
