Roasted Cauliflower with Parmesan, Garlic & Thyme

This quick and easy recipe is full of amazing flavours that compliment the sweet, nuttiness of our handpicked cauliflower. A delicious side for barbecues and alfresco summer dining, as well as an unusual, but delicious, twist to your Sunday roast.

Ingredients

  • 1 head of Darts Farm cauliflower
  • 1 sliced medium onion
  • 4 thyme sprigs
  • 4 unpeeled garlic cloves from the Garlic Farm
  • 3 tablespoons Honest Toil olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 45g grated Parmesan

Method

  1. Preheat oven to 220°C (gas mark 7)
  2. Cut your head of cauliflower into florets; toss on a large rimmed baking sheet with 1 sliced medium onion, 4 thyme sprigs, 4 unpeeled garlic cloves, and 3 tablespoons olive oil; season with kosher salt and freshly ground black pepper.
  3. Roast for 35 - 40 minutes, tossing occasionally, until almost tender.
  4. Sprinkle with grated Parmesan, toss to combine, and roast until cauliflower is tender - around 10-12 minutes longer.
