Roasted Beetroot & Apple Salad with Raspberry Dressing

The flavours of this roasted beet and apple salad are simply wonderful. Light, colourful & oozing goodness! Makes a wonderful starter, side salad or add some chicken from our Master Butchers or Dorstone goats cheese from our deli for extra deliciousness!

Ingredients

  • 1 bunch of Darts beetroot
  • 2 eating apples of your choice
  • 2 sticks of celery
  • Walnuts
  • 50g Dijon Mustard
  • 100g Raspberry vinegar
  • 300g olive oil

Method

  1. Wash your beetroot before boiling with a pinch of salt.
  2. Run under cold water, peel & cut into wedges.
  3. Roast the wedges with olive oil & salt for 20 minutes at 190 °c
  4. Wash, core & slice your apples
  5. Combine dijon , raspberry vinegar & olive oil using a whisk
  6. Toast walnuts in oil & salt for 10 minutes at 160 °c
  7. Wash, peel & thinly slice celery
  8. Mix everything together in a bowl, then dress with the mustard & raspberry dressing & season to taste.
