Crown Prince Squash & Cider Risotto

Risotto is such a quick and easy dish: the soft & creamy rice is complemented by the nutty taste from our Crown Prince Squash and the sweetness from the Devon Red Cider.

Ingredients

  • 500g Darts Own crown prince squash, peeled and diced
  • Olive oil
  • 1 small onion, finly sliced
  • 1 clove of garlic
  • 175g Arborio rice
  • 250ml Sandford Orchard Devon Red cider
  • A few springs of thyme leaves
  • 300ml chicken stock (or veg)
  • 50g Salted butter
  • 75g Parmesan from the deli

 

Method

  1. Heat the oven to 200°C.
  2. Drizzle the squash in olive oil and roast in a roasting dish, for 12-15 mins, cool and lightly mash
  3. Heat two tablespoons of olive oil in a pan and sauté the onions for about 3 mins. Add the garlic and cook for another 2 mins. Add the rice and cook for a minute, stirring constantly
  4. Add one third of the cider and the thyme leaves to the pan. Stir until absorbed into the rice.
  5. Add the remining cider to the chicken stock and gradually add to the pan.
  6. Add and stir for a further 20mins until al dente
  7. Season to taste
  8. Stir through the mashed squash, butter and two-thirds of parmesan shavings.
  9. Sprinkle with the rest of the parmesan and serve.
