Broad Bean, Broccoli & New Potato Salad

A barbecue classic - you can't beat a potato salad filled with seasonal and locally grown veg!

Ingredients

  • 2kg Darts Own new potatoes, halved
  • 300g Darts Own broad beans, in their pods
  • 200g peas, defrosted if frozen, or fresh
  • 200g tenderstem broccoli, chopped

For the dressing...

  • Large bunch of fresh mint, chopped
  • 200ml Stapleton full-fat Greek yoghurt
  • 100ml Stokes Real Mayonnaise
  • Juice 1 lemon
  • Large bunch of fresh parsley, chopped
  • 1 Garlic Farm garlic clove, crushed

Method

  1. Put potatoes in a large pan and cover with water. Add the whole mint sprigs and bring to the boil.
  2. Cook for 20-25 minutes until tender, adding the peas and broccoli for the last 5 minutes, then drain and refresh under cold running water until just warm. Transfer to a mixing bowl and add the broad beans.
  3. Mix the dressing ingredients together, then stir in the potatoes, season to taste with salt and pepper. Serve and enjoy!
