The Hungry Gap: Nature's Pause

rhubarbIf you, like us, eat with the seasons, you may have noticed that there's a time of year when fresh fruits and vegetables are scarce. This period is known as the "hungry gap" and it refers to the challenging time between late winter and early spring when the winter crops have been harvested, but the spring crops aren't yet ready. This is the rhythm of the land—a dance of abundance and scarcity, dictated by nature’s hand.

In our food hall and kitchens, we are taking every opportunity to fill our plates with the season's treasures. Savouring our hand-picked rhubarb, foraged wild garlic, Chris Eaton's asparagus and Cornish earlies - the first of the season new potatoes!

During this time when local produce is scarce, we source highly seasonal fruit and vegetables from brothers Alfonso & Piki, who work directly with small scale Italian growers, supporting their local community and farming for flavour!


plantingOut on the farm, despite being in the midst of the hungry gap, there is plenty to do. The fields hum with activity as the boys spread muck, prepare the ground and sow the seeds of summer. Our herd of Ruby Red cattle emerges from the barn for a summer on the wetlands. It’s always a joy to see them buck and frolic with excitement as they're turfed out.
