The Farm Table Kale Caesar Salad

Made using kale & cauliflower from our fields. This salad is a delicious veggie spin on your classic Caesar salad. Great as the main show or as a side.

Ingredients

- 4 handfuls of Darts Kale 
- Darts Cauliflower 

For the Caesar dressing; 
- 2 tsp Dijon Mustard 
- 100ml Sandford Orchards ACV 
- 100-200ml Soy Milk 
- 500ml Rapeseed Oil 
- 1 Jar Capers, liquid discarded 
- Salt & Pepper 

For topping: smoked almonds, pickled shallots, radish shoots & micro herbs

Method

  • Pickle down & wash the Kale, then lightly salt and oil it, massage the oil and salt into the leaves.
  • Wash the cauliflower and cut into florets
  • Roast at 200c, with oil and salt till golden brown (10-15 mins)
  • Meanwhile, blend all the dressing ingredients together and slowly add the rapeseed oil until the mix thickens
  • Once the cauliflower has cooled, mix with the kale and top with the Caesar dressing. Give it a good mix. 
  • Top with smoked almonds, pickled shallots, radish shoots & micro herbs, 
  • Enjoy!
