Rhubarb, Strawberry & Banana Smoothie

You can't beat our hand-picked rhubarb, fresh from our fields! This refreshing and sweet smoothie recipe is perfect for a sunny day!

Ingredients

For stewing the rhubarb...

  • 500g chopped Darts Farm rhubarb
  • 80ml water
  • 50ml maple syrup

 

Smoothie...

  • 120g stewed rhubarb
  • 75ml Pure Maple syrup
  • 1 large banana very ripe
  • 140g juicy English strawberries from Cheddar, sliced
  • 250ml Sutton Lucy Dairy milk or Rude Health almond milk (or other non-dairy milk)
  • 1 tsp chia seeds
  • 6 ice cubes

Method

Start with the stewed rhubarb, combine 500g of chopped rhubarb with 80ml water and 50ml maple syrup in a medium pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes until tender. Makes around 240g of stewed rhubarb, store the rest in the refrigerator.
 
Blend of the cooled stewed rhubarb with the remaining ingredients in a blender and enjoy!
