Michael Caines' Darts Farm Fillet Steak with Brandy Sauce

At our recent Festive Indulgence Evening, Michael Caines MBE kindly shared his incredible knowledge with us, and showed us how to create this delicious Fillet Steak with Brandy Sauce, using our Ruby Red Beef from our Master Butchers. Perfect for the festive season!

Ingredients

  1. 2 Fillet Steaks, from our Master Butchers 
  2. 1 finely chopped Shallot
  3. Splash of Local Brandy
  4. 500ml Chicken Stock
  5. 150ml Local Double Cream
  6. Tsp Dijon Mustard
  7. Unsalted Butter
  8. Green or Red Peppercorns
  9. Chopped Tarragon
  10.  Chopped Chives

Method

Firstly, cook your Fillet Streaks
Tips from our Master Butcher, Alastair
  1. Cook the meat only when it is at room temperature.
  2. Season steak well before cooking.
  3. Use butter instead of oil if you are pan frying.
  4. Leave steak to rest after cooking so that the juices are absorbed back into the meat.
  5. Add more salt before serving - steak loves salt!

 

Now for Michael's Brandy Sauce 
  1. Remove the steaks from the pan, add the shallots and cook for 1 minute
  2. Deglaze the pan with a splash of brandy
  3. Reduce to almost nothing
  4. Add the chicken stock, reduce by half, add the cream and a large teaspoon of Dijon mustard and whisk in well. Add the pepper corns and then reduce the sauce to consistency
  5. Season with salt and pepper
  6. Add the chopped herbs
