Mia's Winter Quinoa Salad

Try Mia's delicious recipe for this tasty winter salad! Quinoa is considered an essential 'wonder food' becuase it has tremendous amounts of vitamins and minerals which can have a huge impact on our health.

Ingredients

Ready to eat quinoa

1 crown prince squash, cubed

1 pomegranate

1 block of feta, cubed

Coriander

Cumin seeds

Paprika

Lemon Juice

Salt & pepper

 

Method

Cut up the squash into bitesize cubes, season with the spices, salt, pepper and roast in olive oil for 30 minutes until softened. Leave the squash to cool.

In a large bowl, combine the quinoa, cooled squash, feta, coriander and pomegranate seeds.

Add a drizzle of extra virgin olive oil, a squeeze of lemon and season to taste!
