Lunch-To-Go Lamb Pasties

These pasties are picnic-perfect or for a great gourmet lunch-to-go. Beautiful, quality diced lamb is set off by fresh apple in a traditional golden pastry.

Ingredients

  • 450g lean lamb neck fillet cubed or diced lamb (Tell us if needed for pasties and we will dice to correct size for you)
  • 1 cooking apple, peeled, cored and finely diced
  • 1 eating apple, peeled, cored and diced
  • 1 red onion, peeled and finely chopped
  • 1 small potato, peeled and finely diced
  • 450g shortcrust pastry
  • 1 small egg, beaten
  • 2tbsp milk
  • 1tbsp cider or cold water
  • 1tbsp fresh tarragon
  • 1 stock cube

Method

  1. Preheat oven to gas mark 4-5 / 180-190'C
  2. Place the lamb in a bowl, then add the cooking apple, eating apple, red onion and potato and combine. Crumble over the stock cube, cider/water, fresh tarragon and seasoning, then mix well
  3. Divide the shortcrust pastry into 6 and shape into balls. Roll out each ball onto a floured surface and cut out 18cm circles using a small saucer as a guide
  4. Divide the filling between the circles, placing it in the centre. Mix the egg and milk together and brush the edges of each pastry circle. Bring the edges of the pastry together and press firmly. Fold edges over and crimp to give a neat finish
  5. Place on a greased baking sheet and brush with egg wash, then bake for 1 hour
