This recipe uses Treviso Radicchio sourced from the La Sovrana family in the South of Italy. It’s here that the climate, soil and local growing artistry produce crops so complex that they are geographically protected. Through collaborating with growers during the hunger gap, we're sourcing food that is in seasonal abundance, rich with flavour, fully traceable and built on a collaborative spirit that strengthens our food systems.
Here, the sweetness of the dates pairs perfectly with the radicchio, which has a slightly bitter/spicy taste.
2 heads radicchio treviso
50ml extra virgin olive oil
Large pinch of salt
25ml date syrup or pomegranate molasses
4 dates
Set oven to 190°C.
Cut the radicchio into four length-ways keeping the stem intact. Arrange on a roasting tray and dress with oil, salt and saba. Cook for 12 minutes or until they start to caramelise.
Pit the dates, then chop roughly.
Place radicchios on a serving plate, drizzle with extra virgin olive oil, a sprinkle of flaked salt, chopped dates and a good drizzle of date syrup or pomegranate molasses.
